This Vietnamese
crispy crepe
is a favourite
among many
Westerners who
visit Ho
Chi Minh City in
particular,
andVietnam,
in general.
Translated
literally,
banh xeo means
sizzling cake,
or pancake.
The main
ingredient of
the batter is
rice flour.
However,
additions such
as turmeric
and coconut
milk are
common. The
fillings, too,
can be varied
but would
normally
include
shrimps, pork,
bean sprouts
and onions.
Banh
xeo is served
with a plate
of
vegetables/herbs
and the nuoc
cham sauce
(combination
of fish sauce,
lime and
chillies)-

Banh xeo can
also be
enjoyed by
wrapping it
with lettuce
leaves.
